School & Eating On the Go!

With graduate school in full swing, I sometimes have to remind myself to stop and take in the view. Fall is the most beautiful time of year in Washington state and I have a beautiful campus to enjoy for the few weeks before winter rain overtakes us.

And with school and work, eating on the go has become the utmost priority to staying on track. I am so grateful for these 4oz containers I bought before surgery because they have formed the staple of my food packing and planning. It also helps that 4oz is just about as much as my stomach can comfortably handle, less if it's meat.

I AM EXACTLY TWO MONTHS OUT FROM SURGERY!!
So what am I eating these days?
- Ground beef and sauteed vegetables (peppers, onions, and carrots)
- Rotisserie chicken or dark meat chicken
- Mashed potatoes (usually supplemented with unflavored protein powder)
- Refried beans and cheese
- Cottage cheese
- Goat's Cheese, shredded cheeses, and babybel lights.
- Black or green olives
- Raw fruits: apple slices in to-go packs and grapes. Can't do citrus.
- Pistachio nuts
- Isopures
- Premier Protein shakes
- Squares of dark chocolate
- Lucerne Low Carb Butter Pecan Ice Cream
- Cashew milk
- Cooked veggies include: leeks, potatoes, onions, carrots, tomatoes and peppers.
- Avocados and guacamole
- Some chips from time to time, though I try to stick to Quest Protein Chips
- Designer Whey Unflavored (great for adding to things)
- Popcorn (the fiber helped me break a serious constipation streak and is worth the carbs just for the sheer relief it brings me!!)

I may begin to try some raw veggies soon but am hesitant because I tried salads at 4 weeks out and they gave me, well, bad gas and diarrhea. So I'm guessing I wasn't ready for them. I miss salads very much and can't wait until I can eat them again!
I've really been trying to get as much protein and nutrients as I can from whole food sources but to get my protein I still have one Premier shake every morning and 1/3 - 1/2 an isopure diluted with Zero Vitamin Water. So far, I've really fallen into a routine that works for me and my tummy is happy and full!
Did I mention I am down 43 lbs and feeling SO DAMN GOOD?
